Ingredients:

  • 2 large sweet potatoes, peeled and diced
  • 1 bunch of kale, stems removed and leaves chopped
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 inch of fresh ginger, grated
  • 1 ltr of vegetable broth
  • 1 can (400 ml) of coconut milk
  • 2 tablespoons olive oil
  • 1 teaspoon turmeric
  • Salt and pepper, to taste
  • Pumpkin seeds (optional, for garnish)
  • A dash of chili flakes (optional, for garnish)


Sweet Potato and Kale Soup with Ginger:

  1. Prepare the Vegetables:
    In a large pot, heat the olive oil over medium heat.
    Add the chopped onion, minced garlic, and grated ginger, sautéing until the onions become translucent and fragrant.

  2. Cook the Sweet Potatoes:
    Add the diced sweet potatoes to the pot and stir to mix them with the onion and spices.
    Sprinkle the turmeric over the mixture, allowing the spices to coat the vegetables.
    Sauté the mixture for a couple of minutes until the sweet potatoes are slightly softened.

  3. Simmer the Soup:
    Pour in the vegetable broth and bring the mixture to a boil.
    Once boiling, reduce the heat and let it simmer until the sweet potatoes are tender, about 15-20 minutes.

  4. Add Kale and Coconut Milk:
    Add the chopped kale and pour in the coconut milk.
    Continue to simmer the soup for another 5-10 minutes until the kale is soft and the soup is creamy.

  5. Blend the Soup (Optional):
    For a creamier texture, you can use an immersion blender to partially or fully blend the soup in the pot. Adjust the consistency with extra broth or water if needed.

  6. Season and Serve:
    Season the soup with salt and pepper to taste.
    Serve hot, garnished with pumpkin seeds and a sprinkle of chili flakes for a bit of heat.
